The moka pot consists of three parts: a boiler, a metering filter, and the pot inside which coffee is collected.

Heat the water to a temperature of about 70°C.

Fill the boiler with hot water. This expedient reduces the time the coffee remains exposed to the heat of the cooking fire.

Fill the boiler only up to the level of the valve.

Finely grind the coffee to about 400 microns.

Fill the filter with ground coffee and level it out (don't make the mound in the center)

Insert the filter on the boiler and screw the mocha head on.

Place the mocha on the stove, over a very low flame, with the top open.

Turn off the heat when the flow of coffee coming out begins to lighten in color and you hear the classic mocha mumbling.

Don't forget to stir the coffee.
