Le flair et la passion napolitaine, le dévouement et l'engagement : tels sont les ingrédients qui caractérisent le parcours réussi de Salvatore Gabbiano dans le monde de la haute pâtisserie.
Il est membre de l'Association des chefs pâtissiers napolitains depuis 1994. En mars 2006, il a atteint l'un des objectifs les plus convoités pour un chef pâtissier en Italie : il fait partie des maîtres de la prestigieuse Accademia Maestri Pasticceri Italiani. À la télévision, il participe à La vecchia fattoria, Festa italiana, 30 ore per la vita, La vita in diretta. En 2004, il a fait partie de l'équipe de pâtissiers qui a créé la plus grande crèche en chocolat du monde pour le Noël d'Eurochocolate à Naples.
Il a une véritable passion pour les grandes pâtisseries levées, ce qui l'amène à concourir et à gagner à de nombreuses reprises. En 2015, à Turin, il a participé à "Una mole di panettoni" et a remporté le premier prix pour le meilleur panettone créatif. En mars 2016, il participe à "La primavera è dolce", le premier événement sur la Colomba, organisé par Stanislao Porzio, et remporte le premier prix de la "Meilleure Colomba traditionnelle". En 2016, il a rejoint le groupe de pâtissiers de la "Nuit des maîtres de la levure", qui vise à désaisonnaliser le panettone de qualité, afin de le rendre disponible toute l'année. En octobre 2019, lors du Host Milano, il a reçu le "prix de la critique" en tant que meilleur panettone du monde, lors de la première édition du "Panettone World Championship".
