Processed with the Natural Cherry method and enhanced by a 68-hour anaerobic fermentation in a controlled, oxygen-free environment, this coffee develops more sweetness, an intense aromatic expression and a smooth, velvety texture. In the cup it has an intense profile, marked by notes of chocolate.

In the Serra da Mantiqueira, where this coffee comes from, some fazendas use small anaerobic fermentation micro-stations built at altitude to take advantage of the cooler night-time climate. This allows a slower, controlled fermentation that brings out the sweet, chocolatey notes typical of Yellow Bourbon.
