Remove all coffee residue from the filter with a stiff, dry brush.

Run water through the filter holder for a few seconds to remove residue from the previous extraction (purge).

Dry the filter holder with a rag (preferably microfiber).

Press the coffee evenly, also making a slight rotation of the pessin. You need to impart a force of about 25kg.

Hook the filter holder onto the espresso machine, with a firm twist to the right. Be careful that it is firmly attached.

Brew the coffee, for about 25 seconds. The spillage should be smooth and continuous (this is called a rat tail).
