- Prepare the espresso (link to the perfect espresso) in the traditional way in the milk jug, then pour in the hazelnut topping. Use the steaming arm of the espresso machine to mix everything together so as to create a cream of hazelnut and coffee.
- Take a 5.07 fl oz glass and fill it two thirds full with the hazelnut and coffee cream. Whip the fresh cream using the turn mix and ease it delicately onto the surface of the hazelnut and coffee mix using a spoon to help.

- Pour the cold chocolate into a serving glass of 5.07 fl oz. Prepare the espresso in the traditional way directly in the glass, letting it sit on top of the chocolate.
- Add the Baileys to the mix. Take the milk jug and, using the steaming arm of the espresso machine, foam the milk. Then add it to the glass filling it to the top.

- 0.53 oz of orange honey
- Yoghurt mousse for decoration
- Redcurrants for decoration
- Bitter cocoa powder for decoration

- Prepare the espresso in a “Y” cup, having first put the orange honey in the bottom of the glass.
- Whip up the yoghurt mousse using the 17,64 oz siphon and ease it delicately onto the surface of the espresso.

Method

- Foam the milk in the milk jug using the steaming arm of the espresso machine.
