THE INVENTION OF STRACCIATELLA
Stracciatella is an all Italian invention. The first to add pieces of dark chocolate to a sweet white cream was Enrico Panattoni, a pastry chef from Bergamo, in the early 60's. This was the beginning of a long tradition that would give birth to tasty variations of semifreddo, gelato and original chocolate and pastry delicacies. The name "stracciatella" has nothing to do with desserts and pastries: it comes from a traditional recipe from the Rome area, a soup called "stracciatella alla romana".
